Once all four sides are at 145°F (63°C), move on to cleaning up and preparing your grill for another batch of steaks—they’ll continue cooking nicely if you leave them alone until done.

Don’t crowd the grill or cook more than one batch at once: It’s better to have four smallish portions rather than one large one because it allows every piece time within its own heat zone before moving onto another part of your grill surface area where more heat will be needed next time around; likewise with smaller cuts versus whole roasts.
